Our most ambitious wine to date. The 2025 Carvers Hill Estate Reserve Chardonnay is a benchmark English white wine made with the care, complexity, and intent of the finest Burgundian producers, and in a quantity so limited it will not last.

Hand-harvested on 14th October 2025 the grapes were whole-bunch pressed with deliberate oxidative intent; a bold choice that builds richness and texture from the very first moment of winemaking. Fermentation was conducted low and slow to preserve the most delicate aromatic compounds, before the wine was racked with as much fine lees as possible to develop that characteristic creamy weight.

The wine was then split between 500-litre new Burgundian oak barrels and egg vessel for four months. The oak lends subtle spice and structure, the egg providing a natural, rounded texture through gentle micro-oxygenation. The two components were blended with precision, then rested for a further two months in stainless steel before spending two final months in bottle before release. Every stage of this process was deliberate. Nothing was rushed.

The result is a Chardonnay of genuine depth and elegance; expect stone fruit, lemon curd, and toasted hazelnut on the nose, with a palate that is at once rich and tightly coiled, creamy from lees contact. The finish is long, mineral, and unmistakably English.

Recognised by some of the most respected palates in the industry, this is a wine that announces Carvers Hill Estate as a serious force in English white winemaking.
